Our Story

Like many others, my baking journey began during COVID. What started as a simple curiosity for sourdough quickly became a true passion. Day by day, loaf by loaf, I found myself falling in love not just with the process, but with the craft of baking itself.

As I grew as a baker, I began to explore beyond sourdough and found myself especially drawn to pastries and breads inspired by Asian traditions. The textures, flavors, tastes, and techniques of Asian baking resonated with me deeply. Blending these influences with my love for artisan breads gave me a clearer focus — to create pastries and breads that honor Asian elegance while celebrating the strength and character of artisan flours.

Through that journey, I also discovered something that changed the way I bake: flour matters. The character, the quality, the way it feels in the dough and tastes in the final bite — it all comes back to the grain.

At Maron, we honor that belief by working with millers who share the same values. We source from Central Milling, one of America’s most respected artisan millers with over 150 years of history, and Mindful Milling, a local stone miller dedicated to quality and community. Their flours give us the foundation to bake breads and pastries that are honest, flavorful, and full of care.

For me, baking isn’t just about making something delicious. It’s about patience, tradition, art and sharing something genuine — one bread, one pastry, one story at a time.
